Replacing "&" with "and" in two-author publications

I noticed that MLA style recommends the word "and" rather than "&" in citing books with two authors. Is there a setting somewhere in Bookends I can use to adjust this behavior?

All output is controlled by the format. Edit the format, Name Punctuation tab.
