Replacing "&" with "and" in two-author publications!!

I noticed that MLA style recommends the word "and" rather than "&" in citing books with two authors. Is there a setting somewhere in Bookends I can use to adjust this behavior

Like all formatting, that's controlled by the format's settings. Please see the User Guide (Help menu) for how to create and edit formats. You can start with this short video tutorial.
