I will report here even though this is for both macOS and iOS versions.
The Sorting by Label option is inconsistent.
macOS --> sorts by the NAME of the label
iOS --> sorts by the LABEL COLOR (this is actually sorting by the LABEL COLOR NUMBER)
I do not see a preference in the macOS or iOS to change the behavior.
A hack is to name the labels with label numbers as prefixes.

On macOS if you're in column view, sorting the label column it sorts on the text (which is what you are seeing). There is a right-click contextual menu "Sort By Label" that does a sort by color -- in the next update the wording is changed to "Group by Color", which may be a bit clearer.
If you are in single column view, it sorts by color.
As for iOS, you don't see the text, only the color, so it's sorting like the macOS single column view.

OK. BE iOS is meant to follow single column view on BE macOS.
Having separate options (toggles or inputs) to GROUP and SORT would be a useful feature for both macOS and iOS versions.
