I'm thinking about buying one of the new iPad pros and setting it up as my primary work machine (for teaching and academic writing). I will use Scrivener for iOS, but wonder if the Bookends version for iOS is sufficiently powerful. What am I giving up from the MacOS version?

Download Bookends for iOS and see for yourself. It has limitations and ads, but you'll see if it's worth the in-app purchases. This web page describes the functionality.
