Is it or could it be possible to carry out certain operations with attachments from within Bookends eg. saving a copy of a number attachments from a hit list to a particular folder?

If you open the Attachments inspector, you can drag the attachment to a folder in the Finder (and it will be copied there). You can also drag it to an email window (and it will be attached to that email).

I was thinking of copying a number of files simultaneously. For example, I have some pdfs found with a particular search and that want to email or save on a CD

You'll have to click on each and then drag the pdf image one at a time.
