Default Word Processor Between Sessions

I have a couple of problems with application behaviour between sessions, i.e. when quitting and re-launching the app.
1) Every time I quit Bookends the default Word Processor is lost, and replaced with Oriental characters (?) in the Preferences panel.
2) If I change the Field Label of a 'User#' field in the Preferences Pane > References Tab for (say) Type 'Book', then click 'Apply selected label to all Types', the change takes place as expected across all Types. Then after I quit and re-launch, the field is no longer re-named except in the original Type, i.e. 'Book'.
Any thoughts?
