Creating a New Reference Type - Archive Data

I am trying to add a new reference type for information I'm using from, in this case, The National Archives in the UK. I can't find any help files for the Refs preference pane. Can somebody please point me in the right direction please. For example, the Field Labels element (see screenshot) has no way of selecting more than one type nor of 'Applying.'

You want to change the Address line? Double click (slowly) on Address. It will then change to an editable cell and you can type in what you want.
