Is there a way to include the date added field when exporting to bibtex?
I couldn't find it in the list of fields.

No, that's not an option in the format manager. I suppose it could be added.

I think under some conditions it would be useful. This would allow to keep the date added field when exporting to bibtex.
I'm trying to do this to use my references also on an android device.
A related question is this:
For references that have multiple attachments, is there a way to add a sequential attachment number to the file name.
I understand that @ gives a unique id to each reference, and # gives a "sequential reference number" (On rename this always gives 1)
But I'd like to rename attachments, and I don't want them to end up having the same name....

If you rename attachments in Bookends (which is a must, or you'll lose the link), Bookends will ensure they are unique by added a random number if necessary to the end of the name.
BTW, the # is for giving the sequential number in a bibliography. Since when Bookends renames a PDF the name is always of the "first reference" (so to speak), it will always be 1. If you used it in a real bibliography it would increment with each reference.

Any preference as to how the date should look (e.g Dec 10, 2015; 12/10/15; 2015-12-10; etc.)? Localized for language, of course? I don't want to give options, it's a small feature and there shouldn't be a lot of UI baggage, just one way to output.

yyyy-mm-dd would work! Thanks.
BTW is the ID, @ preserved for the entry, so it will not change when new entries are added?
And is it increasing, so newer entries always will have a larger ID than older ones?

The Unique ID (@) is unchangeable for that entry. It's a random number so do not rely on it to indicate when a reference was added, there is no relationship.
