[Manual tags] edit keywords or notes

I want to add tags for each references but I just wonder what is the safe way to add these manual tags. I don't want to lose my tags in any instances like "autofill from internet", etc. I am thinking to use notes over keywords since someone reported "autofill from internet" changes the tags like 1234 to 1234a then 1234b

I'd use keywords. The problem the user reported was with the Key field (User1), used mainly for BibTeX. And that problem will be fixed in 12.7.1.
I think the only time the keyword field might be overwritten is you autofill from PubMed and you edited the import filter to import MESH headings.
