if I import an internet reference to Bookends with the Bookends browser, the "access date" is written in English. But I need it in German: Instead of 10. May it should be 10. 05. or 10. Mai
Where can I customise this?

Bookends doesn't know what a date is (in the metadata, that is). It imports the text provided by the source. The only way to change it is manually, after import. You could do a global change, but with so many different date possibilities that's not realistic.
