When formatting, the BibTeX Markup setting will only be applied if the format name contains the word BibTeX

- Are we supposed to rename our export format to just BibTex; or other variants such as Dellu_bibtex types of patterns will also work?

If it does not, the reference will be output as styled text. This means you can switch between conventional formats and BibTeX.fmt without having to explicitly adjust the output style.

- is that by renaming the format? how is that possible?

Dellu_bibtex should work.

You can rename filters in the Finder, just like any file. Then make sure it's checked in Import Filter Manager.
