I like using the colour labels to curate literature for different papers/projects I'm working on. I find them easier than keywords and at a glance I can see which paper they belong to.

However, I've used all 9 Label categories and I can't see how I can add more. Can you someone please confirm that the limit is 9 labels?

Yes, the limit is 9 colors (plus black). There are many ways to quickly segregate related references. I suggest you simply make a static group for each paper/project You can even group your groups, if you want, so that one folder contains student theses, another is for your personal research, etc. Not only does this allow for an unlimited number of categories, each group will have a name that instantly explains its purpose. Using colors does neither.
