I need to cite in the following way: (Brown et al. 2017: 11)
In the formats manager, I can only choose ";", "," or " " behind the date. Is there a way to get the ":" in?

That's not correct, those are choices for separating the author and date. You're speaking here about Cited Pages, which are ad hoc modifications to the temp citation. You can tell Bookends what to output before (and after, if you like) Cited Pages when the scan is done. You would enter ": " in the Before field. Then in the temp citation you'd do this

{temp cite@11}
