Is it possible to force the same format when i copy/paste stuff
into bookends, right now it uses the format from the webpage, word document or wherever you copy from, can I set that somewhere or is that
a new feature?

Hi.

Use Edit -> Paste Plain Text.

You can assign Command-V to this menu item in Preferences (default is Shift-Command-V).
