When I paste a formatted reference with accented characters into a Eudora or a Mail mail message, the characters are improperly translated. For example:
M?©choulan, Henry and Emmanuel Le Roy Ladurie, eds., L'Etat baroque: regards sur la pens?©e politique de la France du premier XVII^e si?®cle (Paris: J. Vrin, 1985).
Any idea why?

Eudora doesn't handle the Unicode. Mail works here.

Control-clicking and emailing references works with Eudora. Why?

"Control-clicking and emailing"... not following you. What steps are those?

Selecting a reference in list view, control-clicking and choosing "Email..." It's a very nice feature, by the way.
